Mizithra Dry

Milk type: heat treated whey and pasteurized Greek sheep’s and goat’s milk, salt. .
 

Taste: rich flavor, sweetish with the aromas of butter and aromatic herbs emerging.
 

Characteristics: whitish compact mass in shape of a truncated cone with a minimum maturing time of one week and 65% humidity
 

Uses: table cheese, grated on pasta, in salad and cut in pieces accompanying many sorts of dishes. .

Harmony: Excellent match with Sauvingon Blanc varieties and Roditis.

Gruyere

Milk type: 100% Greek pasteurized sheep milk, salt, rennet.
 

Taste: Excellent, rich, slightly salted with delicate butter aromas.
 

Characteristics: Slight yellow mass with small holes covered by hard smear, matures for at least three months, minimum fat 25%, humidity 25% - no antibiotics
 

Uses: Table cheese, plain or accompanied by fruits, sandwiches, soufflé and Mediterranean meat dishes.
 

Harmony: Flirts with Viogner, but also winks at a bottle of red wine of rich taste and tannins creating a stir.

White Cheese

Manouri-mizithra Cheese

Milk type: heat treated whey and pasteurized Greek sheep’s and goat’s milk, salt.
 

Taste: Rich, cool, sweet with natural aromas of milk cream.

 

Characteristics: Fresh white cheese, soft and compact without smear. No need of maturing. 

 

Uses: Table cheese, plain or with honey, ideal to cheese pies and generally salty and sweet pies.

 

Harmony: The wine varieties Sauvignon Blanc and Roditis are an excellent match to this cheese.

Gruyere with oregano

Milk type: 100% Greek pasteurized sheep’s milk, salt, rennet.
 

Taste: Excellent, full taste and rich aromas of fresh local oregano, slightly piquant.
 

Characteristics:  Compact, slight yellow mass with small holes, slightly grated wild mountain oregano, hard smear cover, matures for at least three months, minimum fat 25%, humidity 40%. No antibiotics.
 

Uses: Table cheese, plain, excellent appetizer with tidbits accompaniment.
 

Harmony: Suits to Cabernet Sauvignon, Syrah, Limnio.


 

Milk type: 100% Greek pasteurized sheep’s milk, salt, rennet.
 

Taste: Excellent, piquant with intense and rich aromas.
 

Characteristics: Compact, slight yellow mass with small holes, whole grains of three kinds of fine pepper, hard smear cover matures for at least three months, minimum fat 25%, humidity 40%. No antibiotics
 

Uses: Table cheese, as an appetizer and with meat dishes.
 

Harmony:

Choose between a barrel of Chardonnay, a barrel of Assyrtiko, Pinot Noir, Agiorgitiko. 

 

Gruyere with chilli

Milk type: 100% Greek pasteurized sheep’s milk, salt, rennet.
 

Taste:  Excellent, full sweet taste with a slight piquant note and rich aromas.
 

Characteristics:  

 Compact, slight yellow mass with small holes, slightly granulated dry chilli pepper, matures for at least three months, minimum fat 25%, humidity 40%. No antibiotics. 

 

Uses:Table cheese, as part of a soufflé, plain, as an excellent appetizer with tidbits accompaniment.
 

Harmony: The intense aromas of exotic fruits and the rich flavor of a Sauvignon Blanc barrel wine will lift off its taste.


 

*Tip: In order to let all the rich aromas of the Gruyere to unfold served it at room temperature.
